I'm not sure what to have tonight. I really want fish fingers (I think this could be Janets fault for tweeting/facebooking about them recently!)

We had coconut rice. It's very easy to make and very tasty - soak about 5 or 6 ounces of white basmati rice (for 2 people) overnight in the fridge in a can of coconut milk. Simmer on the hob mixed with a little water until the rice is done and stir through some red kidney beans - delicious and much cheaper than the processed and over priced junk from the supermarket.

Well I had such a huge lunch that I haven't really had dinner today. I have just had a raspberry & cranberry Muller Light yoghurt :D

Sounds yummy, Adam! Last time I had a chili dog was in LA at Pink's and oh my goodness it was absolutely heavenly!

 

I had a boring salad tonight, bleh. Had to use up the rest of my veggies and chicken since I'm not home over the weekend.

You are welcome Pipread, veggie food generally is very easy to make. It astonishes me the amount that people spend on ready meals when it just isn't necessary!

I'm making chicken curry :D

Hey, me too! :lol: I even got some coriander naan bread to sop up the juices. I am so looking forward to having this tonight!

Ahh now I fancy chicken curry too, but don't have any curry paste, and not sure I have all of the spices needed to make one, other than that, no idea what i'm having, I can't make up my mind.

I have corriander naan bread too but put my own garlic butter on it :D

We normally have our main meal at lunch time since I work in the evenings. We were naughty today and went to one of the National Trust places where we had veggie burger and chips. :lol:
