Some time ago, back in September, I got quite ill after eating an ASDA ready meal. After recovering, the thought of frozen ready meals made me feel sick. I just can't think about them, let alone heat one up.

 

Since then, I have taken the step from purchasing convenience foods from the local Sainsbury's (the mark up on simple items there is incredible...my bank balance is a lot healthier now).

 

I've found that I have quite a gift for cooking and have cooked some incredible meals recently (or so my wife says anyway). I've found that if we plan the meals for a week, I can source ingredients cheaper. Last night I had a lovely piece of belly pork which I seasoned and cooked with parsnips, carrots and onions, making a beautiful gravy.

 

Anyway, the point of this post is, does anyone have any recipes for main meals that I could try out that will test my culinary skills, but also be within my limited remit?

that was the recipie i always used to use now i am pretty good in the kitchen even if i do say so myself, my speciallity is curry its quite famous now with family and friends. i found a lot of good easy recipies on the BBC website.

My old housemate used to go to Weightwatchers and she gave me a fab Carbonarra style recipe which I use all the time when I want to feel like i'm eating something stodgy without having too much fat and calories.

 

Ingredients (adapted to how many people you're cooking for):

 

pasta

red onion

mushrooms

philadelphia light

milk

garlic

(you can add peas/sweetcorn/even bacon if you wanted to)

 

-cook your pasta

mix together one large tablespoon of the philly with three tablespoons milk (beat with a fork so it's nice and creamy)

-while your pasta is cooking brown off the mushrooms, red onion and garlic in a pan (and whatever ingredients you wanted to throw in)

-turn down the heat and then add your milk/philly mixture mix altogether so it's made a carbonarra sauce

- pour over cooked pasta and voila!

This is one I use all the time. It's tasty and really simple.

 

For 4 people use:

500g mince (beef or lamb)

1 large tin baked beans

1 stoke cube (lamb or beef)

2 medium potatos, skins left on

Worcester sauce

 

1. Pre-heat oven 200C

2. Brown off mince in saucepan

3. Add beans, a dash of Worcester sauce and crumble in stock cube

4. Slice potatoes about 5mm thick

5. Pour mince mixture into casserole dish, top with potatos

6. Cook in oven for about 50 mins or until potatoes are golden brown.

 

Note you don't have to pre-cook the potatoes. Putting cheese on the top is tasty too :blush:

Butter a casserole dish

Slice potatoes thinly

Alternate layers of onion, tattie, black pepper, grated chedder cheese, and basil.

Funky Scrumpy Chicken (named by my son when he was about 7)

Chicken thighs

Can or cup of cider

Tin of chicken soup

Teaspoon (heaped) of Curry Powder

Any casserole veg you like all chopped up

Water to cover (once soup and cider are in)

 

Throw all ingredients into a large lidded oven dish.

Give it all a stir together.

Cook on a medium temp (200/gas 6) for at least an hour and a half.

Take the lid off for the last 1/2 hour.

Serve with potatoes or rice.

 

(Can be cooked in a large saucepan, but I take off the chicken skins for that!)

Pasta Sauce

 

Fry an onion

Throw tsp mixed herbs in with them.

Add smoked bacon bits OR pancetta bits. Cook together.

Rough chop a tin of tomatoes and add to pan.

Pour over pasta of choice

Sprinkle with cheese of choice and black pepper.

 

Variations include adding any quick cooking vegetables.

 

This is a great one when you're in a hurry, and works well with tortellini (those filled pasta thingys)

Mwa ha ha. I swear it's Jamie Oliver, he's behind it all. He wants us all to buy his cookbooks and watch his programs or he'll kill us all! On the positive side, his recipes are quite helpful and nice!

By the way it's pancake day tomorrow.

 

YAY! We actually had our pancakes today because my sister's away tomorrow, but still yay!

I can't eat them because I'm diabetic. Well I could, but I'm best to avoid them.
