Colby is similar to cheddar. Our main cheeses are Mild Cheddar, Tasty Cheddar, Colby and Edam with Brie, Camembert, Gouda, Feta and Blue Vein (shudder to that last one) all popular. There are lots of specialty goat and sheep milk cheeses made too.
