My youngest broke up for the summer today (the other two finished last month after exams) so family tradition dictates that we go out for dinner, Byron's Burgers for us this evening, I love their courgette polenta fries! Yum! :)

Vegetable cobbler tonight.  It's a mix of onions, beans, tomatoes, courgettes, peppers, carrots and mushrooms, topped with a ring of cheesy scones then baked in the oven. :smile2:

I made veggie "meat"balls for the first time this week, and they were just SO good with homemade pasta sauce and spaghetti.  Having the leftovers of those this evening, along with some spicy roasted chickpeas and steamed broccoli.

We are having jacket potatoes tonight with posh baked beans (the mixed ones with various types of bean) and a nice big salad.

Think it's going to be scrambled eggs and fish this evening. That, or boiled eggs and soldiers, because we are children :lol:

Today for dinner i prepared nice and tasty mushroom risotto, add some amazing vegetable salad and cup of cold fruit tea, i like healthy food so i must cook it every single day by myself, it's hard a bit but really helps me to keep myself in nice fit, usually i keep my dinner in nice plastic food containers. Quality of plastic is really important thing, so i paid a lot of my attention to it and never use low cost and noname products.

We're having a piri piri stuffed roast chicken, veggies and baby potatoes. It all came together in one tray, looks really tasty.

Tonight it's lentil bolognese, with a heaped side of steamed kale, broccoli and bok choi, and a sliced avocado.  All sprinkled with nooch, because nooch (nutritional yeast) is delish.

Petrole Sole, in bread crumbs and blue cheese mashed potatoes. I'm trying a new dish tonight- garlic broccolini. We also have a herbed focaccia.
