Apart from putting them in a curry, roasting them or having them with spinach as saag aloo anyone got any intersting recipes??

I had deep fried hunks of sweet potato with two dips (harissa and sour cream) recently- more delicious than I can adequately describe. :D

 

I love them roasted, also baked (as in jacket potatoes) with some vegemite on them.

Hi folks

I've never tasted a sweet potato in my life. My husband won't touch them with a ten foot pole,and he will eat anything that doesn't MOVE .

The only way I have ever seen them fixed is at Thanksgiving ,they are baked with marshmallow and possibly ? brown sugar .

Hope this helps. Maybe you've already tried them that way .

I think if you go to a page like allrecipes.com, you can type in sweet potatoes and they will show you several dozen recipe ideas .

I like them mashed mixed in with ordinary potatoes.

 

I am not a fan of them baked as I don't like the skins on them. I imagine they will be nice in vegetable curry but I haven't tried them like that.

I love sweet potato and spinach gnocchi - dead easy to make:

 

1. Microwave a sweet potato in its skin till the flesh is soft and the skin peels away easily.

2. Wilt a handful of spinach (or use chopped frozen spinach just defrost it first).

Mix the two together with some flour to form a dough (not too firm).

3. Roll into small balls (walnut sized is about right) and drop into boiling water.

4. When they rise to the top, they are aready to serve.

 

I eat this instead of pasta with bolognese, or instead of rice with chilli, and it's a very tasty alternative. I also use wholemeal flour for mine, but that's down to personal taste. You might like ot season them with a little salt and pepper, or some spices, but I just leave them as is. :)

 

The bonus is that this takes no time at all to make - 15 minutes and you've made it from start to finish - it's on the plate and ready to go! :)

We just steam them whole with a bit of salt. Skin and eat them.

Do you have one of those steamers bree? I wanted to buy one to do nice fluffy rice in (can't get it to go right when I boil it)

Yes. Though we call it a "rice cooker" here :smile:

 

(You can make rice fluffy without it too - just add a little more water than usual, and cook on low heat, after it begins to boil. When it's done you can drain away the excess water - but yes, using a cooker is much easier)

I make a cottage pie and use the sweet potato as the topping with a bit of cheddar cheese. I have also made chips with the, lovely and chewy and delicious with mayo!

How about mashed sweet potaoes? Or fry them into sweet potato fries....soooooo good

Both are really good. I like the mashed with just a wee bit of pure maple syrup mixed in.

I mash them with a bit of butter, then sprinkle with brown sugar and pecans and bake! Yum :)

 

You can also treat them just like a baked potato. They might go better or worse with certain toppings though...

I bake them as well, in the skins. Then mash and add butter, that's all. Absolutely delish!

 

If you overbake them a bit, so they are really soft, they are sweeter, and nothing else is needed aside from the butter.

I never used to like sweet potatoes until someone I know baked them the same way you'd bake a regular jacket potato. like Pontalba described. You eat it the same way as a jacket potato too. I love it like that. I have also seen it used in a salad with peas, carrots and mayonnaise.

Sweet potatoes are a staple here in the Deep South of the U.S..  One of my favorite recipes is Bourbon mashed sweet potatoes.  Bake several large sweet potatoes, scoop out the insides and mash together with about 1/2 stick or more of melted butter, some vanilla, brown sugar, and equal parts heavy cream and bourbon.  Add a bit of salt, too.  So good & easy! If you're feeling really fancy, mix together some pecans, brown sugar and butter, put it on top and pop it in the oven for a bit.

 

My other favorite is sweet potato pie.  Yum.  Now I have to go bake.

LOL  I know, I know!  Everyone I know makes their sweet potatoes with all the lovely additions you mention.  And, yes, it's delicious.  But I guess I'm lazy. :)  I just brush them down, rub olive oil on the outside and bake about an hour and 15 minutes.  A little overdone, but man, oh man!  Sweet!!  Of course lots of butter is added at the table. :D

We normally cut them into strips, oil them and put herbs on them and then put them in the oven. There's lots more things you can do with them though. They're not common around here but sometimes we can find them on the market. Some supermarkets sell them too.
