  1. OK Muggles, I accept that's what you THINK pancakes are, and very nice they sound too. And I promise to try your recipe as soon as I can get some cornmeal.

     

    Now you've gotta promise to try a REAL pancake recipe.

     

    REAL Pancakes

     

    4 ozs flour

    pinch salt

    1 tsp baking powder

    2 eggs

    approx 1/2 pint milk

     

    Sift flour and salt. Add eggs and milk, beat well, gently stir in baking powder. Make the mix pretty thin, like runny cream. Pour into jug.

    Heat a heavy frying pan and melt some butter in it. Pour in enough mixture that will coat the whole bottom thinly, when you tilt it all round. Flip over when cooked and cook the other side.

    Sprinkle with sugar, lemon juice and a knob of butter. Roll up and devour :) (I'll even let you have them with maple syrup, but you've gotta try the lemon juice and sugar first.) Watch for indigestion :readingtwo:

    Cast Iron or non-stick frying pan. How many pancakes does it make.

  2. Just good old fashioned American pancakes:

     

    1 3/4 cup unsifted all purpose flour

    1/4 cup fine cornmeal

    1 tsp baking soda

    1/4 tsp salt

    3 tbls sugar

     

    3 tbls butter (melted)

    1 tbls canola oil

    2 large eggs (or egg beaters)

    1/2 tsp vanilla

    11/3 cup buttermilk

     

    Mix all dry ingredients together.

    Mix melted butter, oil, eggs, and vanilla together.

    Blend in buttermilk with the "wet" ingredients.

    Mix dry and wet ingredients together.

     

    Coat griddle with a little olive oil and cook pancakes until done.

    Serve with pure maple syrup, if available.

  3. Tonight is Pizza night. We are going to try a new Pizza restaurant named Luigi's.

    We just finished the pizza and it was very good. Looks like we have a new place to get out pizza as it is only 7 minutes away. The other place, Napoli's, took about 18 minutes to get there, but it was also very good.

  4. Mum made us dinner tonight! I just picked it up after work!

    It was delicious too - Bragioli.

    These are beef rolls filled with minced meat, hard boiled eggs, bacon, parsley herbs, and cheese. The meat is rolled and fastened with a couple of toothpicks, put in a dish with potatoes and gravy and cooked in the oven.

    Lucky you!!!! You better treat your Mum nice. :D

     

    What type of wine would you have with a meal like that.

  5. I just finished a wonderful dinner, but an odd combination. I had Bison steak and cheese grits as a side dish. I used some butter and a wee bit of Maple Syrup in the grits. Gol darn they were good. My wife had scrambled eggs. she doesn't eat beef of any type and doesn't care for grits (actually she will not try them). :D

  6. Well the biscuits came out fine, I added some chopped onion, cheese, bacon and herbs, but the gravy ........is it really supposed to resemble white tasteless glue? I fed the rest to my chickens and even they just took a quick peck, squawked and went off to wipe their beaks. I think I'll stick to home-made gravy :D

    2 cups sifted flour

    2 tsp. baking powder

    4 tablespoons butter or shortening

    1/2 tsp. salt

    about 3/4 cup milk

     

    actually, Buttermilk biscuits are much better but they use Crisco shortening and it isn't very good for you. ;)

    2 cups all-purpose flour

    1 tablespoon baking powder

    3/4 teaspoon salt

    1/2 teaspoon baking soda

    5 tablespoons chilled vegetable shortening

    1 cup buttermilk

  8. What megan said, you could use it in hashbrown potatoes. Or a thcik slice of toast.......but why not make some biscuits and use it on them. ;)

     

     

    When I was working for a living I traveled a lot. When in Missouri I would sometimes have Biscuits with Gravy, scrambled eggs, and pork chops for breakfast. Missouri was known for their pork chops and they were usually on the breakfast menu.

  9. I've always wondered what grits were too (along with Ranch Dressing ;) ). Thought it was some sort of fried thing. Muggle, I've just been given a large packet of Old Fashioned Biscuit Gravy Mix from the US. It's got instructions of how to make it but I have no idea what to make with it. I understand your biscuits are like our scones, but scones with gravy sounds kinda wierd.

    Let me think on that one and get back to you.

  10. Please Muggle explain to me what "grits" are? I have never fathomed that out. ;)

    See Maureen's post...........Grits are Heaven :( I especially like them baked with cheese (after cooking them the regular way).

    Even though pontalba doesn't like them with Maple Syrup I think they are great that way, just a wee bit of maple though. :)

  11. Have just finished 'Wish You Well' and it is just as you say Muggle, it makes you laugh, cry and feel good. A delightful heart-warming story, where family and love are far more important than material wealth. Thank you very much for the recommendation. ;)

    Aw shucks, I am very glad that you enjoyed the book and it sounds like you enjoyed it as much as me.:(
