I would take:

 

The Three Musketeers by Alexandre Dumas - because I've meant to read it for ages.

 

The Blind Assassin by Margaret Atwood - for the same reason, and because I've enjoyed other books I've read by her.

 

The Empress of Ice Cream by Anthony Capella - just because it looks like a great read and I love the title!

I would take

 

Forever Amber - Kathleen Winsor

Poisonwood Bible - Barbara Kingsolver

 

both because they are books I have wanted to read for a long time but am put off by their size

 

A Tale of Two Cities - Charles Dickens

 

I am determined to read another of his (and hopefully understand it all too) and I know lots of people seem to like this one.

Remains of the day - by kazuo Ishiguro

The Wind-up Bird Chronicle - by Haruki murakami

Doubliners - by James Joyce

 

I hope I would be able to take the kindle too!

When I go on vacation I don't usually have time to read since I'm always out sight-seeing and too exhausted at night to read, but if I were to take a vacation to a beach on a tropical island where there were no sights to see, I'd take the following -

 

The Crimson Pedal and the White by Michael Faber

Jonathan Strange & Mr. Norrell by Susanna Clarke

 

and last but not least because it'd be the first thing I would read on my vacation:

 

The Wind-Up Bird Chronicle by Haruki Murakami

Make that a 2 month holiday, cause I would probably want to explore the place rather than sit in my hotel room reading the vacation away.......

2 weeks with myself and only 3 books?!? Oh my...

 

Philip Pullman - His dark materials trilogy

Cornelia Funke - Inkdeath

Sherrilyn Kenyon - Acheron

 

And I only chose these because they're at least thick enough to get me through two weeks without fearing I run out of books.
