I love artichoke hearts. In salads, drizzled with olive oil, or on pizza, :pizza:artichoke hearts are simply decicious. The most common way artichokes are cooked locally is stuffed with a mixture of garlic, olives, anchovies, capers, tuna, and parsley, and served with crusty bread, salad and potatoes. Today I bought a whole box full, (they are in season - and so at a good price) because I wanted to try a pasta dish with the hearts, but OH decided he wanted bolonaise instead. :character0104:So I have taken around 10 or so of them, and I am going to try and preserve them to use later. I have never tried this before -:D if it will work out or not. WIP up to now - I have removed the hard outer leaves to expose the hearts, put them in a bow of water and lemon juice for an hour, and I am now steaming them lightly. Next I will put them in two big jars filled with chopped garlic, olive oil and parsley. :eek2:

sounds yummy - I normally buy them in jars, but perhaps I will have to get some fresh ones as well. :D
