Scones

My daughter is obsessed with making scones, and I, unfortunately, am obsessed with eating them. She's trying to find the perfect recipe.  Does anyone have one they'd like to share?  Tips?  Tricks?  Thanks in advance for any insight!

Make the mixture quite wet without it spreading all over the place. Gently pat into a rectangle a good 2 inches or more thick.

 

Mix everything together as quickly as possible, over-handling makes scones tough. (I use a bluntish knife to mix with) and I just cut into rough squares rather than use a cutter because it means less handling but that's up to you.

 

Instead of rubbing the butter into the flour, try grating very cold butter into the flour and gently tossing through with knife.

 

Use hot preheated oven, at least 400F (200C)

 

Place scone pieces quite close together if you like soft scones (they will touch when they rise with cooking) or further apart if you like them crisper.

I LOVE scones, but I have to confess that I have never attempted to make them. :blush2:  Perhaps it's my subconscious knowing that if I make them I'll eat them! :D

 

My mum makes lovely scones, so I will seek out her recipes / methods this week for you.

Thanks so much for your advice/input everyone!  She made a huge batch on Saturday that is already gone today.  (Insert sheepish grin)  She's always fiddling with the recipe and is so eager to try your suggestions.  She asked me to pass on her thanks!

I think one of the main tips is don't roll the dough out .. just pat it into shape and then use your cutter. Lots of recipe books say to roll until it's half an inch or an inch or something but then they can come out quite flat if you do that.
